MATCHING FOOD AND DRINKS
Nothing is more satisfying
than matching the perfect combination of food and drink. Usually we talk
about matching wines with foods but lets not forget cordials, flavoured
milks, soft drinks and juices. In this exclusive interview, renowned chef
and food writer Papa Lussy shares some of his secrets with his nephew Matthew...............
Matthew: Papa Lussy,
what do you recommend eating with SOFT DRINKS ?
Matthew. Let’s start with the basics.
The most fundamental rule is that sweet, sparkling drinks like Coke go
beautifully with fat based savoury foods. That’s why its hard to imagine
eating McDonalds or Fish and Chips with anything else. Bolognaise and just
about any Italian foods work extremely well. Never drink soft drinks with
sweets, especially chocolate. Best to avoid red meat and Coke too. (The
only thing to eat steak with is red wine).

Lussy, what do match MILK DRINKS with ?
Matthew. Generally milk products
are best enjoyed unaccompanied, however, there are some exceptions. Savoury
pastry dishes like pies and pasties go down well with Big M. (Try to avoid
Chocolate flavour). Raisin toast is exquisite with either plain milk or
Milo milk.
Matthew: Papa Lussy, do you think its a
good idea to drink water with foods ?
Water can be taken with just about
any food if you must. But unlike some of the drinks above, water
doesn’t add to the culinary experience.....(the exception is proper
mineral waters - not those brands that are just water and bubbles). Don’t
be a cheap-skate and order only jug of water at a restaurant Matthew. Enjoy
yourself.......enjoy your life Matthew !
Matthew: Finally Papa Lussy, what do you
recommend with CORDIALS and JUICES ?
Ah cordials. My salvation Matthew.
Perennial drink to go with any food. Try lemon cordial with cheese on toast.
It is no coincidence that orange juice is eaten in the morning with toast.
This is a very pleasing combination. Pineapple juice is magnificent with
porridge or rice bubbles. THANK - YOU PAPA LUSSY(ed). |
